Recipe: Spinach waffles with Macè’s Chickpea Hummus and fresh Plums

For the perfect savoury breakfast


Ingredients:
 

  • 70 g of boiled and well squeezed spinach
  • 1 egg (for a vegan version, replace with a potato)
  • Sugar-free soy milk to taste
  • Extra virgin olive oil or sunflower oil to taste
  • 100 g of flour
  • Salt to taste
  • A pinch of cream of tartar or baking powder
  • Plums, figs or other fresh fruit to taste
  • Macè’s chickpea hummus


 Preparation:
 

  1. Blend the boiled spinach until smooth. In a bowl, combine the egg (or boiled potato for the vegan version), soy milk, flour and creamed spinach. Mix until smooth.
  1. Add a pinch of baking powder or cream of tartar, following the instructions on the package. Let the dough rest for about 5-10 minutes.
     
  2. Heat up the waffle iron or, alternatively, cook the dough in a pan like pancakes. Cook on a low heat for 7-8 minutes, giving the dough time to rise.
     
  3. Once the waffles are ready, spread Macè’s chickpea hummus on top and top with sliced plums, figs or other fresh fruit in season.
